Food For Thought: SuperBowl Sunday!!

Well, the Pats won…. Again. Ugh. (Sorry Kim, I just can’t cheer for Brady! GIVE SOMEONE ELSE A TURN!!)

But, at least I got some good food out the the deal!!

I made a snack mix in the LA Rams colours. Ok, so their colours are TECHNICALLY Blue and Gold… But, try to find things in Gold… It’s not easy. So, Blue and yellow jelly beans and M&Ms it was!!

We also made up a mac & cheese with a bit of a healthy twist to it. The secret ingredient??

Good ole cauliflower!

I took this recipe from the Food Network, made by Valerie Bertinelli.

Ingredients

  • Cooking spray
  • Kosher salt
  • 1 pound elbow macaroni
  • 1 small head cauliflower, cored
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1/2 medium onion, finely chopped
  • 5 tablespoons all-purpose flour
  • 4 cups whole milk
  • 3 tablespoons creamy French onion dip
  • 8 ounces shredded mild Cheddar
  • 8 ounces shredded Colby Jack cheese
  • 1/4 teaspoon cayenne
  • 2 cups crushed sour cream-and-cheddar potato chips

Directions

Preheat the oven to 425 degrees F. Spray a 13-by-9-inch baking pan with cooking spray.

Cook the pasta in boiling salted water according to the package directions. Drain and reserve.

Meanwhile, core the cauliflower

Grate the cauliflower on the large holes of a box grater, or chop it into chunks and pulse to rice-size pieces in a food processor.

Melt the butter in a large pot over medium heat. Add the onions and cook, stirring often, until softened, about 5 minutes. Add the grated cauliflower and 1/2 teaspoon salt and cook, stirring occasionally, until crisp-tender, another 5 minutes. Add the flour; cook for 1 minute, stirring.

Gradually add the milk while stirring constantly, then increase the heat and bring to a boil. Reduce the heat to medium and simmer, whisking occasionally, until slightly thickened, about 3 minutes.

Take off the heat and stir in the French onion dip, Cheddar, Colby Jack, cayenne and 1 teaspoon salt until melted. Add the cooked pasta and stir to coat. Transfer to the prepared baking dish.

Top the pasta with the crushed potato chips. Bake until lightly browned, 8 to 10 minutes (be careful, the potato chips can burn easily).

But, what good is a SuperBowl party without booze?! So, as well as our beer on tap in our handy keg fridge, we also had WHISKEY on tap!!!

 

 

A word to the wise…. If you’re going to clean something out with dish soap, and then put alcohol in it….. RISE IT WELL!! I definitely gave our whiskey a new tang. GOOD THING I DIDN’T USE THE GOOD STUFF!!

  1. I forgive you Nicole!😁 To be honest I’m not the huge fan of the Brady/Belichick “dynasty” as I once was. Tom Brady is arrogant and I don’t like him constantly promoting his quack “doctor” Alex Guerro. And then there’s the whole lovefest between Trump, Robert Kraft, Belichick, and Brady. Just UGH!🤢

    I love all the yummies you made for the game, especially the mac & cheese with potato chips. It looks like you livened up what was otherwise one of the most excruciatingly boring Super Bowls ever.😴

  3. Oh, I’ve been waiting for this post, Nicole! So much fun! When I saw your tap, I wondered how easy it was to rinse it really well! Eek! That is super cool though and I love how the mac and cheese was mostly amazingly savory with just a touch of healthy stuff. Also love the jelly beans and m&ms like that! Well done! ♥️

  4. Only sport I watch is read-a-thon updates on twitter 😂😂 but I that mac n cheese mmmm, oh and the whiskey dispenser is so cute!… and at the same time I can’t help but think that it’s peeing alcohol 😂:P
